Prerequisite: Kitchen Science and Cooking Fun with a teacher recommendation to advance OR student is at least 8th grade with considerable kitchen experience, including the following skills:
-Listens well and follows multi-step directions, while respecting and working alongside peers and adults.
-Demonstrates safety and skill using sharp knives to chop, dice, and slice with appropriate technique.
-Safely and comfortably uses a hot oven and stove.
-Understands liquid and solid measurements in teaspoons, tablespoons, cups, pints, and quarts.
-Has a basic understanding of measuring using a food scale.
Is able to “clean as they go” while working at a kitchen station, and can work as a team during food prep and clean up.
In this hands-on class, students with a passion for cooking will strengthen their foundational skills, explore diverse cooking methods, and discover cuisines from around the world. Students will study recipes, break them down to understand the methods and theory behind different cooking styles, and even create their own recipes. Throughout the year, students will learn from observed cooking demonstrations with discussion, analysis, and taste testing opportunities paired with hands-on skills work including guided instruction in cooking techniques, in-class recipe preparation, creative experimentation, and scientific flavor exploration. Each week students will bring home a recipe to prepare for their family, and a journal entry assignment to reflect on their home cooking experience. Several times through our class will host a guest who will showcase a global dish broadening your students palette and creativity in the kitchen!
